Happy Monday, friends. Did everyone have a great weekend?! Our sun is officially out and it’s blissfully warm. After a long winter, I couldn’t be more thrilled that spring starts this Wednesday. Plus, best news ever, Martin’s home for the next two weeks and on spring break. I usually try to take a little time away from the blog & office, and squeeze in all the fun. We’re off to enjoy the Monet + Matisse exhibit at the Vancouver Art Gallery this week, but first, we’ll be visiting The Botanist for a delicious brunch. Can’t wait!
And speaking of yummy things… I’ve been loving my go-to Vegan Coffee Banana Smoothie as of late. So good! And it’s one of those perfect mid-week meals because it gives you all the energy - which is exactly what I need to tackle my long to-do lists. I typically make my smoothie during the week and pair it with a hearty side salad too. Yum!
1/2 cup cold coffee
1/2 cup almond milk
1 frozen banana
1 tbsp coco powder
1 tbsp chia seeds
1 tsp agave, optional
Place all your ingredients in a blender and blend until smooth. Pour in your favourite glass and enjoy!
